It wasn't until the 17th century that large-scale commercial production and trade of cinnamon began. Today, in addition to Sri Lanka, cinnamon is also grown in countries like India, Brazil, and Indonesia. Interestingly, cinnamon is the only spice in the world derived from the bark of a plant. After harvesting, the bark is processed and dried, then sold either ground into powder or cut into sticks.
