Kebab, or döner kebab in full, is a dish of Turkish origin, meaning "rotating meat", which is traditionally made from lamb. The term kebab also has Persian origins, and according to tradition, this dish was invented by medieval Persian soldiers who used their swords to grill meat in the open air. A written trace of it as meat roasted on a rotating spit can be found in an 18th-century Ottoman cookbook, although at that time the rotating spit was still placed horizontally. The outer, fried and crispy layer of meat is thinly sliced and served hot in a pita or with various side dishes, tomatoes, salad, cabbage and sauces.
Gyros is a Greek dish, but the method was probably adopted from Turkish cuisine, because the dish is very similar to kebabs. The difference is that practically all kinds of meat are grilled on a rotisserie and the seasoning varies according to the type of meat. They also make vegetarian gyros. It is often served with tzatziki. Its most popular version is the gyros pita.
How to use
You can use beef, lamb, pork or poultry to make kebabs or gyros. Before baking, sprinkle the meat with the spice mixture or use it as a marinade.
